This healthy chicken broccoli pasta
casserole is gluten free and only takes 30
minutes to prepare – in only one pan. It’s
delicious and can be served as a main meal
or side dish.

What you’ll need
2 ½ cups of milk
½ cup of chicken broth
½ cup of cashew butter
2 tablespoons of almond flour
250 grams of gluten-free spiral pasta
1 large head of broccoli, cut into florets
200 grams of chicken breasts, cubed
¼ teaspoon of salt
½ teaspoon of black pepper
2 tablespoons of crushed walnuts (optional)
¼ cup of grated cheddar cheese (optional)
Method
1. Preheat oven to 180⁰C.
2. Mix the milk, chicken broth, cashew butter, and
almond flour together. Set aside.
3. Place the dry pasta in the bottom of a casserole
dish.
4. Layer the broccoli on top of the pasta.
5. Pour 3/4 of the milk mixture over the pasta and
broccoli.
6. Bake for about 15 minutes.
7. Remove the pan from the oven and add the
chicken.
8. Then season with the salt and pepper.
9. Pour the remaining milk mixture over the
casserole and add optional walnuts and cheese.
10. Bake for another 10-15 minutes (or until
everything is hot).
11. Serve and enjoy!
