New restaurant in the heart of Greater Sydney defines authentic Thai cuisine

The real taste of Thailand comes to West HQ with premium , unique and immersive dining experience .
Fresh produce , authentic scents and rich flavours are three of the key ingredients of Sydney ’ s newest 180-seat Thai restaurant in Sydney ’ s West HQ Rooty Hill , which promises guests a gastronomic celebration of Thailand in a relaxed , inclusive , and vibrant environment .
The re-opening of West HQ in 2019 saw it fast becoming the destination for authentic cuisines that celebrate the diverse communities of Western Sydney . The opening of its 180-seat restaurant , New Town Thai , continues this tradition by offering authentic Thai cuisine by one of Australia ’ s most up and coming chefs , Rungthip ‘ Tippy ’ Pureprasert .
The New Town Thai restaurant follows on from the success of West HQ ’ s Eat Street Central ’ s New Thai Street Food venue , which , since opening in 2019 had become the most frequented food and beverage venue across West HQ ’ s expansive dining options , due to its authentic and traditional approach .

“ Inspired by the relaxed , inclusive , energetic , colourful and exciting characteristics associated with Thailand , we have created an authentic Thai cuisine , coupled with a stylish and sophisticated , yet fun , space that will deliver a great and unique dining experience .”
The multi-million-dollar restaurant - designed by Altis Architecture - features a bespoke mural celebrating the beauty of Thailand and its culture through its overlayed textures and images . The mural also adds intrigue as customers will find something different in the mural each time they dine .
The lead chef of New Town Thai , Rungthip Pureprasert , affectionately known as ‘ Tippy ’ – is one of Australia ’ s most up and coming chefs due to her ability to embrace traditional Thai flavours while bringing her own creative flair to deliver a balanced depth of flavour .
Born in Thailand , Tippy was originally employed as a casual chef at the New Town Thai Street Food venue in 2019 , before being appointed to lead the passionate and dedicated New Town Thai kitchen team , a role she continues in with the New Town Thai restaurant .
“ I ’ m proud to create Thai cuisine using the traditional approach to perfectly combine and balance the flavours of each dish I cook , while also adding a bit of my own creativity to enhance the depth of flavour our guests will experience ,” she said .
“ I love the authenticity of the menu which includes crowd pleasers such as Crying Tiger Salad , Miang Kham , Pao Kee Mao and my personal favourite , Thai Green Curry .
“ It is an aromatic feast , starting with the smell of fresh Kaffir lime leaves and rich green chilli paste , and when it ’ s stir-fried with coconut milk , you have an explosion of fragrances including galangal , lemongrass , and green chilli .”
An integral part of Tippy ’ s cuisine are the herbs and chilli pastes imported directly from Thailand , coupled with locally sourced fresh produce .
