News - Technical education B&CMA 91st Annual Technical Conference: all you need to know about biscuit production T he Biscuit and Crackers Manufacturers’ Association Annual Technical Conference 2016 (BCMATECH), held in spring, is the largest conference solely for the cookie and cracker industry intended for professionals from all areas of the bakery sector and suppliers to the industry. This year, the conference took place May 14, in Atlanta, Georgia, US, and featured a general session covering the yearly outlook regarding the state of the industry and breakout sessions focusing on production, technology, management and sustainability issues. Topics and sessions addressed core technological subject matters and prominent consumer issues - essential information for industry professionals. The B&CMA offered a new interactive breakout session where participants attended a presentation and then had the opportunity to complete hands-on experiments related to the subject matter. The themes of this year’s seminars were: • Biscuit Ingredient Formulation • How to Get the Most from Your Ovens • Clean Label - Ingredient Process • Collaborative Robotics • The Future of Capping • Sensory Application • Gluten Free Ingredients • Gluten Free Cookie Production • Global Trends in Oils & Fats: Opportunities for the Biscuit Category • Trans Fat Replacement. Annual Technical Conference. These winners had the best (the least) DART incidence rate in 2015 for their bakery size. The following are bakeries with less than 500 employees that demonstrated an outstanding commitment and dedication to employee safety and excellence in achieving a DART incidence rate of 0 for the year 2015: • KELLOGG COMPANY - MUNCY BAKERY, Muncy, Pennsylvania • NEWLY WEDS FOODS - SPRINGDALE DIVISION, Springdale, Arkansas. The following are bakeries with more than 800 employees that demonstrated an outstanding commitment and dedication to employee safety and excellence in achieving a DART incidence rate of 0.160 for the year 2015: • KELLOGG COMPANY - AUGUSTA BAKERY, Augusta, Georgia. The Safety Awards Program was established in an effort to raise awareness of the importance of safety in the workplace. The safety awards recognize those member bakeries that demonstrated a healthy and safe work environment. The Chairman’s Award for Safety Excellence represents the best overall record among member bakeries and is structured so each member’s individual plant competes against other plants of a similar size. The award is presented to the bakeries with the best or (the least) DART incidence rate. These awards are presented at the opening General Session.
