trends
in sweets and snack revealed at ISM 2016
ISM, the world's largest trade fair for sweets and snacks, was able to record more visitors
yet again this year when it took place between January 31 and February 3. Analysts from
Innova Market Insights were present at the fair in Cologne, Germany and presented the
trends for 2016 in sweets and snacks.

Organic growth for clear labeling: 23% of
confectionery launches featured fruit or vegetable
concentrate/extracts on their ingredients list
(2015Q3, Europe).
Free-from claims including gluten-free and dairy-free
are increasingly observed: ever more brands add
such claims and retailers have introduced their own
free-from brand lines.
Free-from for all (sweets): +124% increase in chocolate
launches with “dairy free” claims (2014-2015, Europe).
Free-from for all (snacks): +23 % increase in global
snacks launches with a gluten free claim.

Processing the natural way.
Green light for vegetables: +55% increase in global
savory snacks with kale.
Vegetables delivering innovation in baking: in the
United Kingdom, Saf Express launched a new line of
dehydrated vegetable crackers. Vegetarian alternatives
ProSweets Cologne
ProSweets Cologne, the international supplier fair for the
sweets and snacks industry and held in parallel with ISM,
was again able to register roughly 17,600 trade visitors
from approx. 100 countries. The share of foreign visitors
was 65%, while 336 providers from 34 countries presented
new solutions and developments for recipes, production,
packing and logistics for sweets and snacks.

to trendy meat snacks: eat vegetarian food at least
once per week - increased in Europe by 33%.
Creating a ‘real’ link: we have lost touch with our
toots and it is time to reestablish links with “real”
food. “Real” in this contexts concerns telling a
story about where a product comes from and
moves beyond simply its certification.
Small players, big ideas: combining trend
platforms: seed and bean, fine dark chocolate
with a ginger flavor (Denmark, May 2015).

chocolate saw a +21% increase in chocolate
launches with a coconut flavor tracked in 2015. l
The 47th ISM is scheduled to take place from January 29 to
February, 1, 2017, in parallel with ProSweets.
Awards at ISM
ISM was visited in 2016 by roughly 38,500 trade visitors from
146 countries, among which 67 percent hailed from abroad.
Furthermore, 1,601 exhibitors from 65 countries presented at
ISM 2016, corresponding to 4.5 percent more exhibitors than
in 2015.
Among others, two technological innovations were voted as
the top innovations by ISM visitors. Katjes took first place
with the Magic Candy Factory, the world's first food-certified
3D printer for fruit gums. Second place was awarded to an
innovative snack product: spicy wasabi-flavored coconut

crisps by Hamburg-based company, Heimatgut. Third place
was awarded to BonchaBoncha from Taiwan, which can
apply, among others, selfies and other photo motifs, in
excellent printing and color quality to sweets and candies.
