GARRY’S BAR S Written By: Leigh-Ann Worrell Photography : Rachelle Gray ECLUSION ROAD IS THE HOME TO ONE OF THE ISLAND’S BEST-KNOWN SECRETS: GARRY’S RUM PUNCH BAR. On the grill, fish is prepared to a tender, mouth-watering delight. The thought of pickled pigtails seems a bit unappetising at first, but once served up with slices of sweet potato, became an instant favourite among a group of hungry friends. The locale’s signature drink – rum punch – is good to the very last drop. The bar is an oasis Garry (christened Garfield Ifill) has carefully created for the past 12 years. He admits that the journey has not always been easy, but was well worth it – and was far from over. Garry had been working in hospitality for about 10 years before opening his own spot. His initial interest in mastering rum punch came out of his response to an on-the-job problem. “Someone took a shortcut in what [the rum punch] was supposed to be. Having the knowledge of what a rum punch is supposed to be, I fixed it. But it was an issue because I was not the person to deal with it at that point in time . . .,” he recalls. 32 | BIM ROCK | FOOD ROCKs
