roast Chef Leandro’s Bajan fish Photography: Kishmar Shepherd Written by: Leandro Stuart T HE YARD FOWLS, WEREN’T EVEN CROWING GOOD, AND DAYBREAK FOUND US ON THE ROAD. OUR TINY THREE-VEHICLE CONVOY, MOVING AT MODERATE PACE ALONG THE NORTH COAST ENROUTE TO A GOOD DIVING SPOT. After a quick breakfast stop we arrived at Stroud Bay, then minutes later decided to relocate due to strong under currents and choppy surf. Our move took us to Maycocks beach, not far away, and what we assumed to be more forgiving waters. Flippers, snorkels, and spear-guns ready, off we went, on our quest to catch fresh fish, for a real Bajan roasting. We floundered over a 30-foot coral shelf, into open water. After about 2 hours at sea and a small catch, we headed back to shore. For the roasting and a cool dip in its sparkling water, we choose Fryers Well another picturesque spot.
