Chicken Soup from Radauti

In order to understand the quality of some of the Romanian soups, we must take a trip to Radau-
ti, a small town in northern part of Romania, and try a typical ciorba (chor-bah) or sour soup. This
ciorba (sour soup) is so good and so popular that adopted the name of the city of its supposed
origin. It has a very pleasant, somewhat creamy taste and is very similar to the Romanian tripe
soup, except it is made of poultry and lots of vegetables, which makes it a lighter
version of tripe soup.
Ingredients:
1 whole boneless, skinless chicken
breast
2 carrots,
1 parsnip,
1 onion,
1 green pepper,
2 egg yolks (or the equivalent egg
beaters)
1 cup light sour cream,
3-4 cloves garlic, chopped

Beat the eggs with the sour cream in a larger bowl, add the
chopped garlic and mix well. Add one or two ladders of cooled
soup to the egg mixture and combine well. Pour the egg
mixture in the pot and place on medium-low heat. Add and
lemon juice or vinegar (whichever you prefer) and bring to a
boil. Take the pot off the heat and add chopped parsley.
