Chicken Soup from Radauti Spanish Version: Page 21 In order to understand the quality of some of the Romanian soups, we must take a trip to Radau- ti, a small town in northern part of Romania, and try a typical ciorba (chor-bah) or sour soup. This ciorba (sour soup) is so good and so popular that adopted the name of the city of its supposed origin. It has a very pleasant, somewhat creamy taste and is very similar to the Romanian tripe soup, except it is made of poultry and lots of vegetables, which makes it a lighter version of tripe soup. Ingredients: 1 whole boneless, skinless chicken breast 2 carrots, 1 parsnip, 1 onion, 1 green pepper, 2 egg yolks (or the equivalent egg beaters) 1 cup light sour cream, 3-4 cloves garlic, chopped Preparation: Juice from 2 lemons or white Put the chicken in a pot with 8 cups of water (to cover com- vinegar pletely the chicken) bring to a boil and remove the foam. Pour the egg mixture in the pot and place on medium-low heat. Add and lemon juice or vinegar (whichever you prefer) and bring to a boil. Take the pot off the heat and add chopped parsley. Pofta Buna!
