RECIPE / APPLE & RHUBARB CRUMBLE Finish off the meal with this super dessert This recipe can be with berries or feijoas. In June, Tamarillos go well, or try pears instead of apples. Canned or preserved fruit also can be utilised. APPLE & RHUBARB FILLING Apples Crumble peeled, cored and sliced (Granny Smiths work well) Rhubarb topped/tailed and peeled. Chopped into finger size lengths. 1.5kg Mix filling well and place into oven proof dish 500g 1/2 tsp Liquid honey 2 Tbsp Lemon 1 Sultanas / raisins optional Vanilla essence or pod 100g 1 tsp CRUMBLE Butter 120g Rolled oats 1 cup Flour 1 .5 cups Salt good pinch Cinnamon 1/2 tsp Ground Brown sugar 1/2 cup Golden syrup 3 Tbsp optional (for drizzle) In another bowl, mix dry ingredients together and rub on soft butter. Once fully combined, place over apples, drizzle with golden syrup and bake for 40-50 minutes. Mixed spices (zest and juice) METHOD Preheat oven to 185°C TO SERVE Serve warm with vanilla ice cream, custard, whipped cream, runny cream or mascarpone – your choice!
