What is Sous-Vide?
Sous-Vide is a French term literally meaning Under Vacuum.
Simple explanation
A raw or partially processed product is placed into a plastic
bag, can be natural or have other ingredients, then
vacuum sealed.
The bag is then placed into a water bath of various
temperatures from 100ÂșC down.
There is a temperature versus time equation to get
products to varying degrees of cooked. In a restaurant this
maybe a piece of meat to medium rare, or commercially to
fully cooked for food safety and shelf life.
