Ανέκαθεν η Θεσσαλονίκη είχε την τάση να είναι ένα βήμα μπροστά από πολλές άλλες πόλεις και σε πολλούς τομείς... ό, τι νέο δοκιμαζόταν εδώ και είχε επιτυχία, θα μπορoύσε να πετύχει οπουδήποτε αλλού! Είναι το κοινό της πόλης άλλωστε αρκετά επιφυλακτικό και δύσκολο... Πάντα λοιπόν η Θεσσαλονίκη είχε τον τρόπο να ανοίγει νέους δρόμους στην τέχνη, την επιστήμη, τη γαστρονομία πόσο μάλλον και στην εμπορική δραστηριότητα. Ειδικά τα τελευταία χρόνια με την κρίση, νέοι κυρίως επιχειρηματίες βγήκαν από την εύκολη λύση ενός ακόμα café ή ενός εστιατορίου και επιστράτευσαν φαντασία και όραμα, με αποτέλεσμα να δημιουργήσουν καινοτόμους χώρους και να προβάλλουν νέες ιδέες.
