We are assisting Lady Star this month by bringing back Chef Pierre Lafayette for a Mother’s Day Special Meal. As always recipes for these multi-course gourmet dishes can be found easily on-line. Bon appetite and Happy Mother’s Day!
‘Greetings, Mothers everywhere … and all who love you! I am Chef Pierre Lafayette, of the famed Pirate House in beautiful Savanah, Georgia – USA. Today I bring you all an adventure in fine dining designed especially for all our Mothers. Let us begin.
1st Course – The Appetizer
Exotic truffle mushroom bruschetta with sage and tallegio
2nd Course – The Soup
Curried lentil soup with a tart apple brunoise and crème fraiche
3rd Course – The Salad
Panzanella - Tuscan tomato and bread salad with blue lake green beans, torn basil and goat cheese
4th Course – The Sorbet
Pavlovas with Kir Royale Sorbet and Kiwis
5th Course – The Fish
Pan seared White Sea bass, sweet corn and fava bean ragout, marjoram pesto and a micro basil salad
6th Course – The Meat
Tornadoes Rossini filet mignon, brioche croutons, seared fois gras and summer truffles
7th Course – The Dessert
Summer peach cobbler with Tahitian vanilla cream
8th Course – The Café
Café Glacé
1 jigger of day-old All Day Gourmet Coffee, 1 jigger cheap brandy or expensive cognac (depending on who you want to impress) and 1-pint vanilla ice cream. Chunk it all together in a blender and mix on high until smooth….
Lock the door, close the drapes, and serve in elegant clear glasses. Serves 2.
