Memorial Day BBQ

I always try to put a little history behind the food I write about and since Memorial Day is such an important day I thought I would include a bit about it.

A bit of our countries history: Memorial Day was started by former slaves on May, 1, 1865 in Charleston, SC to honor 257 dead Union Soldiers who had been buried in a mass grave in a Confederate prison camp. They dug up the bodies and worked for 2 weeks to give them a proper burial as gratitude for fighting for their freedom. They then held a parade of 10,000 people led by 2,800 Black children where they marched sang and celebrated.

Origins: The custom of holding observances (including the laying of flowers on burial sites) to remember and honor those who gave their lives in military service goes back many hundreds, if not thousands, of years. In the United States, that custom has long since been formalized in the creation of Memorial Day (formerly known as Decoration Day), a federal holiday observed on the last Monday in May to remember the men and women who died while serving in the United States Armed Forces. http://www.snopes.com/military/memorialday.asp#5OXKhgB1R7EsdYGR.99

Honey Whiskey BBQ Sauce for pork or beef spareribs

2 cans of tomato paste 1 cup of honey whiskey

¼ cup minced garlic & onion 1 cup of molasses

2TBS basil 3TBS Worchester sauce

Mix all together and pour over pork or beef spareribs cooked slowly @ 250 degrees covered for 2 hours then you can either bump up the heat to 350 for the last hour or pull them out and place on the BBQ for the last bit to really cook in the sauce. Be sure to cook a lot for your family and friends, you can’t just eat one.

Spaghetti Salad

Start your water boiling for the pasta, you will need fresh cucumbers, tomatoes, onion, celery, olives all chopped into bite size pieces, mix Zesty Italian dressing into the veggies and when pasta is done toss in with the vegetables, place in the frig for 2 hours before severing top off with feta cheese.
