Many people overlook the silvery-green foliage in favor of pods, but fava greens offer fresh fava flavor without the work of shelling pods. They’re light, tender, succulent and embody the earthiness of spring. To make the dressing, combine reserved orange juices and grapefruit juices with shallot, salt, pepper, and orange zest in a small bowl. Whisk in the oil until well blended. Place fava leaves in a large serving bowl and lightly toss with dressing. Di- vide fava leaves among four plates, arrange orange and grapefruit segments around the leaves.
