With a much larger space than its previous location, and a décor and cuisine that transports patrons straight to Italy, Sole Mio delivers on its promises. So the menu keeps growing,” he explains. One of the latest newcomers on the menu – Ravioli stuffed with baked eggplant and burrata cheese in a classic pomodoro sauce. Chef Domenico discovered by chance that the creamy texture of roasted eggplant pairs perfectly with soft creamy mozzarella cheese. It hasn’t taken long for the dish to become a hit. Only the best and freshest ingredients from all over Italy are featured in the Sole Mio Antipasto, a satisfying combination of salame, buffalo mozzarella, tomatoes, tender artichokes, green olives, grilled vegetables and fried calamari – the perfect appetizer.
