1 medium egg 1 standard coffee mug of self raising flour 1 standard coffee mug of whole milk 1 teaspoon of baking powder 1 small pinch of salt
Butter for the pan
Add all the batter ingredients to a large jug and stir until combined with a whisk, until a thick and smooth batter is achieved, if it's too thick then add a dash more milk.
Place a large thick bottomed cast iron pan on the embers of a campfire, not too hot, just a nice steady medium heat, you should be able to hold your hand over the heat for a couple of seconds.
Add a good knob of the butter to the pan, and as it starts sizzling, then add the batter, aim for 3x10cm pancakes in the pan at a time.
Wait for the bubbles to start to form in the centre of the pancakes, this should take a few minutes, I love to get the kids to watch for these. Then flip the pancakes with a spatula. Cook for another 3 minutes. The outside should be lovely and brown with crispy edges to the pancakes.
In our family it is madatory to drizzle generously a stack of these pancakes with some proper maple syrup, but you work them how you like. them!
