Wash and core the apples. Place them in your dish.

Fill the inside of the apples with chopped dates.

Drizzle over some honey (I used some smoked honey) followed by a sprinkling of demerara sugar.

Add a glass of apple juice, cider or other fruit juice to the dish and a knob of butter. This helps create a rich glossy sauce.

Bake in your BBQ (indirect) for about 40-45 minutes at temp of 150C or until the apples are just soft. Don’t worry if they split a little. You could score a horizontal cut around the apple if you like. This may prevent the skin splitting but I don’t bother.

Making this dish brought back some happy autumn childhood memories. My parents had a large garden with several apple trees so we always ate a lot of apples and my Mum cooked up a variety of desserts. This dish was one of my favourites, served with custard. You can fill the cored out apple with dried fruit, jam or mincemeat. Use honey and sugar to add some sweetness depending on the variety of apples.

You will need:

one apple per person

Approx. 3 dates per apple

Honey

Demerara sugar

Apple juice

Knob of butter
