Makes 12 Aebleskiver

Aebleskiver ingredients:

150g plain flour

2 tsp baking powder

2 tbsp caster sugar

1 tbsp cinnamon

1 egg

250ml milk

2 tbsp oil plus extra for frying

Brandied Blackberries

30g butter

3 tbsp brown sugar

300g blackberries

50ml (or thereabouts) brandy

Clotted cream to serve

Equipment:

A wide pan such as a paella pam

A seasoned cast iron Aebleskiver pan (I bought mine from Amazon)

A pair of disposable wooden chopsticks

Kitchen preparation:

1. Place flour, baking powder, sugar and cinnamon in a measuring jug and stir.

2. Add egg, milk and oil and mix with a fork until fully combined.

Fireside method:

1. Have your fire die down a little. You don’t want big flames, just a nice radiating heat. Create a space in the centre of your fire and place a trivet (or a couple of fire bricks) in it for your pan.

2. Melt the butter and sugar together in the pan over your fire then toss in the blackberries. Pour over the brandy and allow to warm.

3. To ignite, tip the pan so the warm vapours ignite then shake pan gently to disperse flames. Take the pan off the heat and set aside.

4. Throw some small pieces of wood into the centre of the fire so it builds up.

5. Fill each dip of an Aebleskiver pan with oil and heat until a small amount of batter bubbles. Remove from the heat and pour batter into the cups. As soon as the bottoms brown you want to flip them over (I find chopsticks the easiest way to achieve this).

6. Remove the first batch of Aebleskiver, top up the oil and return to the heat. Repeat until you have fried all of the batter.

7. Serve the Aebleskiver with the blackberries and a dollop of clotted cream.
