Christmas tree pull-apart bread

MAKES 32 PIECES
• 2 tsp fast-action dried yeast or 20g fresh yeast , crumbled
• 400g strong white bread flour
• 30g olive oil , plus extra for greasing
• 1 tsp granulated sugar
• 1 tsp fine sea salt
• 1 medium egg , mixed with 1 tbsp water
FOR THE FILLING
• 60g parmesan , cut into 2cm pieces
• 1 garlic clove
• 200g mozzarella , cut into 2cm pieces
FOR THE HERB BUTTER
• 1½ tbsp rosemary leaves
• 1½ tbsp basil leaves
• 30g unsalted butter , diced
1 . Put 220ml water and the yeast in mixing bowl then warm 2 min / 37 ° C / speed 1 . Meanwhile , lightly grease a large bowl . 2 . Add the flour , oil , sugar and salt to the yeast mixture , then knead Dough / 2 min . Transfer to the greased bowl and bring together into a ball . Cover and leave to rest in a warm place until doubled in size ( about 1 hr ). 3 . Line a large baking tray with baking parchment . For the filling , put the parmesan into mixing bowl and grate 10 sec / speed 10 . Transfer to a bowl , setting 2 tbsp aside . Put the garlic in mixing bowl and grate 3 sec / speed 7 . Add the mozzarella and larger bowl of grated parmesan , then pulse Turbo / 1 sec / 1 times . Transfer to a bowl and set aside . Clean the mixing bowl .
4 . Once the dough has doubled in size , divide it into 32 balls and flatten each one into a disc 4cm in diameter . Place 1 heaped tsp cheese mixture in the centre of each ball , then fold the dough edges in to form a tightly sealed ball . Place all 32 balls , seam-side down and just touching , on a baking sheet lined with baking parchment in the shape of a Christmas tree . Cover with beeswax paper or a clean tea towel and set aside to prove in a warm place for 30 mins . 5 . Heat the oven to 200C / 180C fan / gas 6 . Once risen , brush the tree with egg wash and bake for 15 mins or until the rolls are golden . 6 . For the herb butter , put the rosemary and basil in mixing bowl then chop 5 sec / speed 7 . Add the butter and melt 2 min / 60 ° C / speed 2 . Brush the melted herb butter into the joints of the baked tree and sprinkle with the reserved parmesan . Serve whole at the table .
