Roast tomato & tuna linguine

SERVES 4
• 750g cherry tomatoes on the vine
• 1 garlic bulb , broken into cloves
• 3 tbsp olive oil
• 220g good-quality tuna in olive oil
• 1 tbsp capers , drained
• ½ tsp chilli flakes
• 400g linguine
• small handful basil leaves , to serve
• parmesan , grated , to serve ( optional )
1 . Heat the oven to 180C / 160C fan / gas 4 . Arrange the tomatoes , still on the vine , in a roasting tin and sprinkle the garlic cloves around them . Drizzle with oil and season . Roast the tomatoes and garlic for 25-30 mins until the tomatoes are bursting and the garlic cloves are soft . 2 . Remove the roasting tin from the oven . Discard the cherry tomato stems and squeeze the garlic flesh out of the skins . Mix the garlic and tomatoes together in the tin , then stir in the tuna , capers and chilli flakes .
3 . Cook the linguine following pack instructions . Drain , reserving a ladleful of the cooking water . Add the linguine to the roasting tin and stir to combine with the sauce . Add some of the reserved cooking liquid if it seems a bit dry . 4 . Stir through the basil leaves and serve with plenty of black pepper and some grated parmesan , if you like .
