Gambas Pil Pil( Chilli & Garlic Prawns)
SERVES 2
INGREDIENTS
• 4 tbsp Spanish olive oil
• 4 garlic cloves, finely sliced
• 1 red chilli, finely sliced
• 6 large king prawns, shell on
• 1 tsp sweet smoked paprika
• 1 lemon, ½ juiced, ½ cut into wedges
• Handful of parsley, finely chopped
• Bread, to serve
Garlic, chilli, prawns and paprika – four ingredients that were destined to be together. Serve with plenty of bread for soaking up those garlicky juices.
1 Heat the olive oil in a medium-sized frying pan over medium heat. Add the garlic and chilli and fry for 30 seconds, being careful not to let the garlic burn. Add the prawns and paprika, then cook for around 2 minutes, turning occasionally, until the prawns are pink and cooked through.
2 Add the lemon juice, toss everything together, then remove from the heat. Scatter over the parsley and serve in the pan with a wedge of lemon and some bread to mop up the sauce.
