Smashed Beef Köfte Tacos

SERVES 4
FOR THE KÖFTE
• 1 small onion, coarsely grated
• 2 garlic cloves, minced or finely grated
• 1 tbsp ras el hanout
• 400g beef mince
• Small bunch of coriander, finely chopped
• 4 medium flour tortillas
• Sunflower oil
• Chilli sauce and lemon wedges
FOR THE GARLIC SAUCE
• 4 tbsp Greek yoghurt
• 2 tbsp mayonnaise
• 1 garlic clove, finely grated or crushed
• ½ tsp lemon juice
FOR THE SALAD
• Small wedge( about an eighth) of red or white cabbage, shredded
• ½ red onion, thinly sliced
• Squeeze of lemon juice
• 1 tomato, halved and sliced
We’ ve taken the viral trend of cheeseburger tacos and turned it into a more substantial, easy kebab.
1 In a large bowl, combine the onion, garlic, ras el hanout, mince, and coriander, and season well. Mix thoroughly with your hands until fully combined. If you have time, cover and chill for at least 1 hour or up to 1 day.
2 Mix all the sauce ingredients together in a small bowl and chill until needed.
3 Place the cabbage and red onion in a bowl with a pinch of salt and the lemon juice. Scrunch the mixture with your hands, then mix in the tomato and set aside.
4 Divide the beef mixture into four equal portions. Press each portion of beef directly onto one side of each tortilla in a thin, even layer, almost reaching the edges. Heat a drizzle of oil in a large frying pan over medium-high heat. Working in batches, place the tortillas beef-side down in the pan. Press down with a spatula and cook for 3-4 minutes until the beef is browned and crisp. Flip and cook the tortilla side for 1-2 minutes until golden and toasted. Keep the cooked tacos warm in a low oven or covered with foil. Scatter each taco with salad, drizzle with garlic sauce, roll up, and serve with chilli sauce and lemon wedges.
TIP: You can easily swap the beef mince for lamb, chicken, or pork. The mixture would also make 8 smaller tacos rather than 4 medium ones.
