Raspberry White Chocolate Macadamia Ice Cream Sandwiches

MAKE 14 TO 16 COOKIES
INGREDIENTS
• 225g unsalted butter , softened
• 115g light brown sugar
• 110g caster sugar
• 1 large egg
• 100g condensed milk
• 360g self-raising flour , sifted
• 1½ tsp vanilla bean paste
• 250g white chocolate , chopped into chunks
• 90g macadamia nuts , roughly chopped
• 275g fresh raspberries
• 465ml tub vanilla ice cream
• Handful of freezedried raspberries
1 Line a baking tray with baking parchment and have an ice-cream scoop ready . 2 Put the butter and sugars into a large bowl . Beat together for 1-2 minutes until combined . It doesn ’ t need to be light or fluffy – just mixed well . Add the egg and condensed milk , then mix until everything is emulsified . 3 Add the flour , vanilla bean paste , chocolate chunks , nuts , and a pinch of salt . Mix until combined and no visible streaks of flour are left . It should look like a dough at this point . 4 Scoop out dough balls onto the lined baking tray using the ice-cream scoop . Press the fresh raspberries on top of the dough balls . 5 Put the baking tray into the freezer and leave for at least 4-6 hours , but preferably overnight . 6 Once the dough balls are frozen and ready for cooking , heat the oven to 180 ° C / 160 ° C fan / gas mark 4 . Place a few of the dough balls onto a new baking tray lined with baking parchment , leaving plenty of space around each one . Bake for 14 minutes . Repeat with any remaining dough balls . 7 While the cookies are still hot , use a large round glass or large cookie cutter to press into each cookie , removing the edges and leaving a neat round behind . Let the cookies sit on the tray for at least 30-45 minutes before transferring to a cooling rack to cool completely . Meanwhile , crush the freeze-dried raspberries in a pestle and mortar ( or use the base of a cup ) to a fine crumb . Set aside . 8 Once the cookies are cool , get your tub of ice cream and use a serrated knife to cut the tub into 1cm-thick rounds . Remove the cardboard lining from each round . 9 Sandwich one ice-cream round between two cookies . Roll the cookie sandwich in the freeze-dried raspberry crumb to coat the exposed side of the ice cream . Serve immediately .
