Griddled Chicken , Little Gem , Boursin & Peach Salad

SERVES 4-6
INGREDIENTS :
• 2 tsp garlic powder
• 1 tsp onion granules
• 1 tbsp chicken seasoning
• 2½ tbsp vegetable oil
• 4 chicken breasts
• 150g Boursin Garlic & Herbs
• 3 peaches , pitted and cut into 6 wedges
• 1 small red onion , finely sliced
• 3 Little Gem lettuces , leaves separated
• 25g blanched almonds , toasted and roughly chopped
FOR THE DRESSING :
• 1 garlic clove , crushed
• ½ tbsp Dijon mustard
• 1 lemon , juiced
• 25ml extra virgin olive oil
• 25ml olive oil
• ½ tbsp honey

Fire up your barbecue for this indulgenttasting lunch . It features delicately flavoured Boursin Garlic & Herbs , along with succulent chicken and sweet peaches .
1 Combine the garlic powder , onion granules , chicken seasoning , 2 tbsp vegetable oil , and some seasoning in a bowl . Add the chicken and coat well . 2 Brush the remaining vegetable oil over a griddle pan or barbecue grates . Add the chicken and cook for 5-8 minutes on each side until cooked through ( barbecues vary in heat , so it may cook quicker . Insert a meat thermometer into the middle of the thickest part of the chicken to check – it should read 70 ° C ). Remove to a plate , then cover and allow to rest before slicing . 3 Peel the circular foil lid off the Boursin Garlic & Herbs , leaving the remaining foil around the base and sides . Place on the coolest part of the griddle pan or barbecue grates , foil-side down , along with the peaches . Cook the Boursin for 6-8 minutes and the peaches for 3-4 minutes on each side . Remove both to a plate . 4 When almost ready to serve , make the dressing . Combine the garlic , mustard , lemon juice , both oils , and honey in a bowl . Season to taste , then add the red onion , lettuce leaves , and half the grilled peaches and chicken . Toss to combine . 5 Peel the foil away from the Boursin and carefully place it in the centre of a platter . Arrange the salad around it , drizzle over any remaining dressing , then top with the remaining peaches and chicken . Scatter over the toasted almonds to serve .
