Casarecce pasta with cherry tomato sauce

This vegan casarecce with raw cherry tomato sauce recipe is super simple and only takes 15 minutes to make . Casarecce is a twisted short pasta that retains a good bite – perfect for simple pasta dishes .

250g cherry tomatoes , halved 3 spring onions , finely chopped 4 tbsp extra-virgin olive oil 3 tbsp red wine vinegar 4-5 dashes hot sauce 200g casarecce a few leaves basil , torn

1 In a bowl , mix together the cherry tomatoes , spring onions , olive oil , vinegar and hot sauce , then season really well with salt and pepper . 2 Add the casarecce to a large pan of salted boiling water and cook until al dente . Before draining the pasta , add 1-2 tbsp of the cooking water to the sauce . 3 Drain the pasta and toss with the sauce . Sprinkle over the torn basil and serve .
