When it comes to seasonal spring offerings , freshness is at the forefront of every mixologist ’ s mind . And with new cocktails on the Seahorse Grille menu , there is something reminiscent of the season for everyone . “ These drinks are great for spring because they are refreshing , well-balanced and full of tart and fruity flavors that ring in the true feelings of the season ,” says Steven Coppell , assistant food and beverage director at Newport Beach Country Club .

In addition to contemporary cocktails , the menu features new beers and wines for those looking to indulge . Read on to discover the best of the current drink options and how the team developed the new menu .

SPRING SIPS There are five new concoctions for diners to enjoy , each with its own fresh twist to bring the spring theme to fruition . For a bright , light option , try the passion fruit Collins , which combines the flavored liqueur with vodka and lemon , or the gin-forward Fairway to Heaven , crafted with Chartreuse plus pineapple and lime juices .
Whiskey drinkers will enjoy the All Rye , All Rye , All Rye , in which rye whiskey and angostura bitters blend with aperol , grapefruit and passion fruit liqueur for a fruity pop of flavor . Or , there is the B & B : Birdies & Bogeys , where a reserve bourbon and Benedictine liqueur are infused with dried cherries , brown sugar , vanilla bean , cinnamon and orange peel for a few days .
