When you think of California cuisine, you think of “fresh”, “healthy”, “flavorful”, and “vibrant” food. With a Mediterranean climate and the Pacific Ocean along its coast, California has a vast array of fresh fruits, vegetables, meat, fish and seafood available to create amazing recipes.

Californians know how to pick their fresh produce and here are a few tips on how to choose yours.

Crab

Dungeness crabs are very popular in California, especially during the Holidays and to choose a fresh one, pick one that has some personality when touching it. You need a feisty one…Enjoy!

Salmon

Pacific Salmon, as everyone knows, is packed with protein and good fat such as Omega-3 fatty acid. One of the most heart healthy choices and a very versatile protein. To pick the freshest, look for bright color, moist and shouldn’t smell fishy. Avoid any brown spots or browned edges.
