TASTE everything by hand . But as much as Useli loves to cook with traditional Sardinian ingredients like saffron and pecorino , she ’ s not afraid to branch out .
“ My curiosity helped me ( and still helps me ) to explore recipes from other Italian regions too ,” she says . “ Today , the menu in my restaurant includes several dishes whose recipes were suggested by my Italian friends .”
Useli says she was drawn to Baltimore because of its diverse population , which continues to rise in part due to the abundance of top universities and research institutions in the city . And as the number of immigrants and visitors from around the world grows , so does the demand for international restaurants .
The result is a global culinary scene that Irena Stein , the restaurateur behind Venezuelan concept Alma Cocina Latina , says is far from lacking .
“[ Baltimore ] is attracting newcomers to start all kinds of businesses , and it also has a big adventurous community in search of new flavors ,” Stein says .
Stein credits this open-mindedness , as well as economic opportunities and the ample community support , for the high number of international eateries popping up around the city .
“ Baltimore residents are working passionately to transform this city and make it great for everyone here and those who are moving here ,” she says .
More than purveyors of delicious dishes that satisfy every sense , Baltimore ’ s international and immigrant-owned restaurants are testaments to the city ’ s long-held status as a welcoming destination for newcomers , no matter where they originate from . In return , these eateries allow us to travel via our taste buds , using traditional cooking practices and family recipes to take us on a global culinary adventure . VB
