Wife and husband duo Nicole Foster and Dwight Campbell bring bold, bright flavors to their plant-based ice cream made from cashew, almond and hazelnut milks. Cajou offers a range of flavors— horchata, baklava, sweet potato, kulfi— inspired by the couple’ s global travels. Part bookstore, part vegan restaurant, Red Emma’ s is a worker-owned and cooperative cafe that features lots of plant-based goodies, including a vegan brunch menu. Highlights include the cashew tofu quiche and toast topped with shiitake bacon and hummus. In addition to serving delicious brews and pastries, Red Emma’ s has helped to launch several influential Baltimore cooperatives like 2640, a community events venue, and the Baltimore Free School, a collaborative learning environment where Baltimoreans teach one another free of charge.
