Ingredients: 1 cup walnuts 1 cup almonds 1 1/2 cups pecans 1 cups filberts (hazelnuts) 1/2 cup pepitas (pumpkin seeds) 1/2 maple syrup 2 T olive oil 1 tsp fresh herbs, chopped fine (use 1 1/2 tsp of dry) rosemary, thyme, basil, sage 1 teaspoon cayenne sprinkle of sea salt, to taste About the Author Instructions: Preheat oven to 300 degrees Fahrenheit. Line a rimmed baking sheet with parchment paper for easily removal and clean up. Combine nuts in large bowl. In small bowl pour in maple syrup and olive oil, add chopped herbs and cayenne. Pour over nuts, stirring gently to coat. Sprinkle sea salt to taste. Roast for approximately 45 minutes, stirring every 15 minutes. Enjoy warm or cool on parchment. Store in airtight container. Variations: Use nuts of your choosing as long as they add up to a 5 cups total. Vary your herbs. You can use a combination of fresh and dried. Remember it’s 1 tsp fresh or 1 !/2 teaspoons dried. I usually stick to 4 choices, I’ve tried oregano with good results I use 1 teaspoon cayenne but love the kick of 2 teaspoon. If I’m bringing this as a gift I stick to 1 teaspoons. 2 teaspoons brings some heat. Enjoy finding your perfect combination.
