FUSS-FREE BACON AND FETA FRITTATA

Ingredients
• 150g diced bacon
• 1 tablespoon olive oil
• 2 handfuls( about 100g) finely chopped baby spinach
• 6 eggs, lightly whisked
• 1 cup full cream milk
• ½ cup crumbled feta or soft goat ' s milk cheese, or grated cheddar
• salt & black pepper, to taste
To serve( optional):
• simply dressed salad greens
Method
1. Preheat the oven to 190 ° C. 2. In a medium-sized ovenproof pan, fry the bacon in a little olive oil for 3-4 minutes, or until the bacon is lightly golden. Stir in the spinach until it wilts. 3. Mix together the eggs and milk and pour into the pan. Add the cheese and seasoning. 4. Bake for 20 minutes, or until golden. Remove from the oven, allow to cool slightly, then serve.
Variations: Use slivers of smoked salmon instead of bacon, which will also reduce the cooking time as you will only need to wilt the spinach and then everything can be mixed together and put in the oven.
Divide the mixture between the holes of a muffin tray to make a delicious snack or lunchbox filler.
