I took this opportunity to interview Head Chef Manuel Arizabal.
Manuel was born in the Philippines & grew up locally here in
Australia where he started out his culinary career in Asian infused
cuisine. He really flourished during the latest years of his career
in Sydney heading multi-site operations in Parramatta, Eastern
Suburbs & The Rocks, experimenting with French, Eurasian &
Mediterranean infused cuisine.

What would you say your style of cooking is?
Intricate. It’s the finishing touches, the attention to detail that
defines me as a chef and bringing together simple food with
fine dining elements.
What do you like to experiment with? I definitely try to mix
up a sweet and salty combination in each dish I design, I think
it is my Asian heritage that naturally forces me to mix various
flavours where possible
What WOW factor item do you have on your menu? 100% the
seafood platter for two for its generous size and it’s competitive
price. The shared breakfast tower is also a menu item that
people go crazy for.

What do you love about the restaurant business? What I
love most about this business and I don’t mean the industry, is
the fact we were able to bring exquisite and beautiful food at
affordable prices.
