CHICKEN CURRY IN A HURRY

Here ’ s a quick and simple mild chicken curry recipe with bags of flavour . Ready in 30 minutes , it makes a great go-to mid-week meal for the whole family . Freezer-friendly so you can make a big batch and save some for later .
Cooking time : 35 mins Serves : 4-6
Ingredients
• 1 kg deboned chicken thighs
• 4 medium onions , chopped
• 2 tsp crushed ginger
• 2 tsp crushed garlic
• 3 medium roughly chopped tomatoes
• 2 chopped green chillies
• ½ tsp turmeric powder
• ½ tsp red chilli powder
• 1 tbsp mild or medium curry powder
• 1½ tsp salt
• 4-5 tbsp canola oil
• 200ml water
Directions
1 . Heat oil in a deep pan and add the chopped onions . 2 . Fry on high heat for 10 mins until brown in colour . 3 . Add the crushed ginger and garlic and fry on medium heat for 2 mins . 4 . Add the chopped tomatoes and green chillies and fry on medium heat for 2 mins . 5 . Add the turmeric powder , mix and fry on medium heat for around 3 mins till tomatoes are soft . 6 . Now add the chicken pieces and fry on high heat for 2-3 mins until the chicken pieces are browned . 7 . Add the curry powder , red chilli powder and salt , mix and cook on high heat for
5 mins . Continue to fry on medium heat for another 5 mins . 8 . Now add 200ml water and cook on low heat for around 20 mins till the chicken pieces are tender and oil separates .
Serve the chicken curry over basmati rice with some good naan bread to make it a delicious meal .
