Sunflower-Broccoli
Layer Salad
You will want to try this delicious, nutrient-packed salad
perfect for a summer picnic. Each serving is rich in vitamin C.
Prep Time: 18 minutes
Ingredients
• 1 lb bite-size broccoli
florets (8 cups) • ½ cup fat-free, plain yogourt
• ½ medium red onion,
thinly sliced • 1 ½ tbsp honey or coconut
nectar
• 2 tbsp apple cider vinegar
• ⅓ cup black, seedless
• 1 tbsp organic or non-GMO
raisins or dried, tart cherries
mayonnaise
• ⅓ cup freshly shredded,
• 2 tbsp salted, roasted
extra sharp cheddar cheese
sunflower seeds
Instructions
1. In a large glass trifle or serving bowl, layer the broccoli,
onion, raisins (or dried tart cherries), and cheese.
2. In a small bowl, whisk together the yogourt, vinegar, honey,
and mayonnaise. Pour the dressing evenly over the salad.
3. Cover and refrigerate until ready to serve. Sprinkle with the
sunflower seeds just before serving.
Tip
Want more flavor and crunch? Sauté uncured organic turkey
bacon until crisp, chop into bits, and sprinkle on top. Top with
your favourite nuts.
