B eyond Cheddar, look for Burrata, Fontina, Munster, Neufchatel, and Raclette for cow cheeses off the beaten path.  The nature of these versatile cheeses loves a flexible wine like Pinot Noir.  DuMol makes a few great Pinots but their Russian River offering is the most affordable.  It displays gentle, smoky notes and a solid acidity to match and to intensify the character of these unique cheeses.  Like wine, the factors influencing cheese flavor are multifaceted.  While calving season plays a role in the fat content of cheese, it also depends on each farmer’s schedule.  The great news is that these summer-diet cheeses appear in the market for the holiday and winter seasons.  Ask your local cheesemonger to curate some choices for your holiday tables, appetizer plates and charcuterie boards — and we wish you delicious holidays! 44 ART CHOWDER MAGAZINE
