She remembers , “ Dad put them into a vat with our Riesling and made a dozen cases . We do the same thing to this day though the production is almost 1,000 times bigger and it is simply called Huckleberry d ’ Latah ($ 10 – www . latahcreek . com ). “ Now , it is the wine that we are known for in the 28 states in which we do business . Huckleberry gets our foot in the door to give our other red , white and reserve wines a chance to be noticed better .” It ’ s true ; the unofficial poll of local restaurants placed it on more than half of their wine lists , and every grocery store . People like it — a lot . It is a sweeter style of pink wine , so colored by the huckleberry juice , but the tart berries lend it a balancing crispness to the last impression — inviting the next taste .
Seems like we prefer balance in flavor : sweet / tart , sweet / sour , sweet / spicy . Most of our foods are balanced like this : teriyaki , honey mustard and raspberry vinaigrette for examples . More wines with added flavors are meeting demand , spurred by a growing cider market , mead market and the youthful desire for innovation . The first wine coolers were made in exactly this way . Some things do not change over time , just their presentations — as true in antiquity as today .
