Recipe of the Month

White Chicken Chili

Recipe Yield: 4-6 bowls

Serving Size: 1 bowl

Prep Time: 20 minutes

Cook Time: 6-8 hours

Ingredients:

2 cans Cannellini Beans, drained and rinsed

3 cups chicken broth, low sodium

½ red onion, chopped

3 cloves garlic, minced

1 pound skinless, boneless chicken breast, chopped into ½” pieces

Salt/Pepper to taste

½ cup Mozzarella cheese, shredded

Directions:

1. Place chicken in the bottom of your slow cooker.

Sprinkle with salt and pepper.

2. Layer beans, onions, garlic and any additional vegetables

you have on hand on top of the chicken breast.

3. Cover chicken, beans, and vegetables with chicken broth.

4. Cook on low-heat for 6-8 hours.

5. Serve chili in bowls, topping with Mozzarella cheese.
