ANNA MANLULO
FILIPINO cuisine has been left under the gastronomic radar for a long time and while it is not well known in Australia, a beautiful new cookbook is about to change that. ‘7000 Islands – A food portrait of the Philippines’ was of?cially launched last month at the Kinokuya Sydney. Author Filipino-Australian Yasmin Newman presented the new book with the support of publisher Hardie Gran, SBS, friends, family and supporters including Tourism Attache Consuelo Jones of the Philippine Department of Tourism Sydney. The event showcased not just the book but also Yasmin’s love for the Filipino foods. These include the sweets like the purple yam (ube) cake, sansrival, and cassava. Savoury dishes include the home made pandesal with adobo ?akes, chicken empanadas and peanut adobo (adobong mani), all prepared and cooked by the author. What sets this cuisine apart from its Asian counterparts is the rich and colourful foreign in?uence of the guests that set foot on its shores, from Chinese merchants to Portuguese explorers and Spanish conquistadors and the American troops. The cookbook not just showcases recipes but also history, classical songs and folklore familiar to any Filipino. With over 100 authentic Filipino recipes, the cookbook is grouped into 13 parts from dipping sauces to party food to desserts wtih spectacular photos of some of the Philippines beautiful landmarks. Born to an Australian father and Filipino mother, Yasmin Ngrew up eating Filipino food and fell in love with the culture and cuisine that opened doors to her career in food and travel writing and photography. Her recipes and photos are featured in various mainstream magazines in Australia including an ongoing podcast as part of the SBS Kitchen Conversations series – Sarap: A Filipino Food Journey.
