How One Chef Traveled
From the South to SoCal
T
he concept of NAWLINZ Bistro comes from Chef
Marcus Webster’s French-Creole heritage. He’s
been doing this cuisine for 20 plus years, honed
from years of enjoying Southern comfort food in his
hometown of Fort Smith, Arkansas. His recipes are a combination of hand-me-downs as well as original ones he developed on his own. Webster met his partner George Pero about
three years ago when Pero hired him as a corporate chef for
his Thousand Oaks-based business, Auctions in Motion. The
duo clicked and envisioned doing a restaurant together, with
opportunities to branch out and franchise.

NAWLINZ Bistro Newbury Park opened in February 2012.
“The line was just out the door that day,” says Webster.
Seeing an opportunity for expansion, they opened the downtown Oxnard location in September 2013. Says Webster,
“We wanted to give people in
Oxnard a traditional New Orleans food experience
with a twist.”
Shortly before the holidays, the
Newbury Park location closed and was converted to a commercial kitchen, where the catering division now operates.
“Whenever you have good quality food, people will ask you
to do events for them,” says Webster, explaining the business’
evolution to catering.
Dubbed Conejo Valley Catering, the full-service catering
operation is beyond Cajun food. “We can do anything – taco
bars, Italian food, Asian food, salad bars, name it,” says Webster, explaining the diversity and depth of the cuisines he and
his team can handle for parties of 10 or 910.
