Summer Lettuce Wraps. During the summer we prefer to keep things on the lighter side. Some of us also try to reduce the amount of simple and processed carbohydrates we take in. So I've decided to share one of my easiest, simplest, yet delicious meals. Great for any time of the day. Take any kind of large lettuce leaves you like. I'm not a lover of uncooked bitter greens so I'm using Romaine Lettuce here. Rinse off and trim the lettuce leaves. Spread any flavor of hummus on the clean leaves. Here I'm using artichoke and spinach hummus. I topped it with button mushrooms, thinly sliced tomatoes, red onion rings, and sweet black olives. You can enjoy it as an open faced sandwich or veggie boat or wrap it like a burrito. Substitute any veggies you like. Since hummus and olives are a healthy fat just like avocados are its still wise to use them sparingly. A little goes a long way. This wrap is also so full of flavor there is no need to douse it in dressing. Remember to eat clean and stay healthy. Pinky :-)))
