What is The Cookery History ? " We started dreaming about 17 or 18 years ago . It was nine years from when we first saw the old saloon until it became an inviting , comfortable place to join friends and family to share a meal . We finally opened the Cookery in the Spring of 2015 . We strive to be a reflection of everything we want you to see in Seward - honest people , great service , and amazing food . This year ' s challenge was to allow the kitchen to keep up and produce a little different for customers — Miss our fried chicken . After expansion , we hope to bring those friers back . Years of struggle , years of success , COVID was the struggle , almost back to pre-covid times . " Putting one foot in front of the other and trying to stay true to ourselves and stay genuine and not become jaded . Something I remind my staff a lot is to stay humble and kind . Stay genuine , be proud of what you ' re serving but don ' t have an ego about it . At the end of the day , we ' re just serving food ."
