RECIPE PHIRNI THIS POPULAR SWEET DISH IS A TRADITIONAL RICE PUDDING MADE DURING TRADITIONAL WEDDINGS. PROVIDED BY SAMAR HARLARNKAR Ingredients: Instructions: 2 cups of milk • 2 tbsp of rice 3 tbsp of sugar 1/4 cup of blanched and sliced almonds 1 tsp of crushed cardamom 1/2 tsp of kewra essence 66 | AAARZU | WEDDING ISSUE 04.2017 • • • • Soak the rice in water for a few hours. Then drain water and grind rice into a smooth paste. Bring the milk to a boil. Over medium heat add rice, sugar and carda- mom and stir constantly till milk thickens. Remove from the heat and add the almonds. Put it into a bowl and chill. Serve in a platter.
