ALASKA

Alaska tastes like wild salmon pulled from cold waters that morning and king crab cracked open at dockside tables while floatplanes skim overhead. Even the berries are more vivid here, ripened on steep mountainsides under a summer sun that refuses to set. The setting may be rugged— glaciers, fjords, spruce forests— but the cooking is exacting.
