SPICY HONEY SALMON BOWLS

INGREDIENTS :
4 slices salmon fillet 6 T oil 2 tsp hot sauce ( sriracha ) 2 T honey 1 T soy sauce 1 T rice vinegar
Avocado Salsa : 2 avocados , dices
2 cucumbers , diced 1 jalapeno , seed removed and diced 2 T oil 1 T lemon juice 1 T lime juice handful fresh parsley leaves Spicy mayo 1 package arugula or lettuce 3 cups cooked rice
DIRECTIONS :
Preheat the oven to 450 degrees . Combine the oil , hot sauce , honey , soy sauce and vinegar . Pour over the salmon and bake for 15 minutes . Turn up the heat to broil and broil for a few minutes for an extra smokiness . Combine the salsa ingredients . Place the arugula in a bowl , and top with the rice . Add the salsa and salmon , and serve with spicy mayo on top .
