A taste of the NANA region Caribou meat and gravy
Recipe from Bonnie Brown, originally published in From Kotzebue Kitchens
Ingredients: 3 cups diced caribou meat( substitute with beef if needed) ¼ cup diced onion ¼ teaspoon onion salt ¼ teaspoon poultry seasoning ¼ teaspoon thyme Pepper as needed ¼ cup flour, more as needed Water as needed
Steps: Mix the meat, onion, onion salt, poultry seasoning, thyme, and pepper over medium heat until brown. Make a paste with flour and water. Add the paste to browned meat and cook until the flour is dark in color. Add a little flour paste or water at a time and stir to desired consistency. Serve over rice.

NANA partnered with the Aqqaluk Trust to produce the second edition of the Iñupiatun Dictionary. The project was guided by our Elders who serve on the NANA Regional Elders Council and by the Iñupiaq Language Commission. They seek to retain and restore our language for future generations. They understand that the revitalization of our language is vital to the continuity of our Iñupiat culture and traditions.
