Our Chefs in Action
The competition season kicked off with the Management segment of AKPSI24 , featuring hopeful students eager to share their restaurant concepts with industry professionals . The winning concept , a seafood-centric restaurant named Nostos , was the brainchild of a plucky team from Delta High School , of Delta Junction , Alaska . Their menu focused on sustainably sourced fish and partnering with state-based entities who emphasize ocean conservation as a value of their companies .
On the Culinary end of the competition , nine teams from seven schools battled on the competition floor . Inside the “ square ” students created three courses with the additional challenge of no running water , no electricity and only one hour to complete the herculean task . The cream rose to the top that Tuesday when Team Thunder Mountain High School from Juneau , Alaska was declared the champions of the day . Their menu featured hand crumbled Alaskan King crab cakes , umami-rich White King salmon accented with notes of chili oil & honey , rounding out the experience with a dessert course of mango roses nestled in a coconut custard-filled tuille cup flecked purple with ube .
