INGREDIENTS
4 slices bacon, cut in half
4 eggs
4 flour tortillas
1 avocado, pitted, peeled and
mashed
Sriracha or Tabasco sauce
(optional)
Chopped fresh parsley
or cilantri for garnish

f you love the spicy deliciousness of Mexican flavors, you don’t have to wait until
suppertime to dig into one of your favorite cuisines.
Shake up your breakfast by switching out regular bacon and eggs for Breakfast Tacos,
which add tortillas, avocado and a little hot sauce to the mix. And if you are dreaming
about guacamole, give this classic Mexican snack a sweet twist by adding a little
pineapple. Not only is it scrumptious scooped up with tortilla chips, it also makes
a terrific topping for grilled chicken or fish.
PINEAPPLE GUACAMOLE
Serves 4
INGREDIENTS
2 ripe avocados, peeled and pitted
Juice from one small lime
½ teaspoon sea salt
½ teaspoon cumin
½ small red onion, chopped
½ cup pineapple, cut into very small cubes

DIRECTIONS
• Mash avocado with a potato masher
until it is the consistency you like
(smooth or chunky – both are great!)
• Stir in lime juice, salt and cumin.
• Stir in onion and pineapple and
serve.
DIRECTIONS
• Heat a large skillet over medium-
high heat and cook bacon until it is
done the way you like it. Remove
bacon to a paper-towel-lined plate,
cover with foil to keep warm and
set aside.
• Whisk eggs until well combined
and add to the skillet with the
bacon drippings. Stir until they are
softly scrambled. Remove from
skillet to a bowl and set aside.
• Heat the tortillas, either for 30
seconds in the microwave or if you
like a little char, place them on the
grates on your gas stove over low
heat for a minute, turning carefully
a few times with tongs.
• Spread the warmed tortillas with
mashed avocado. Top with egg,
bacon, a drizzle of Sriracha or
Tabasco sauce if you are feeling
adventurous, and a scattering of
parsley or cilantro.
• Serve at once, telling your kids to
roll up the tortillas and dig in.
