E3 CONFERENCE ATTENDEES TOOK

Trek
with DR . JEFFREY STAMP

Attendees at the E3 conference in Las Vegas took a food-safety trek with Dr . Jeffrey Stamp , Ph . D ., and his son-in-law , Noel Gauthier , whose family of five can often be found overlanding to beautiful places .
Their talk was an excellent opportunity to pair food science and safety with ideas for packing tasty meals that are easy to make but also ( and perhaps more importantly ) easy to keep safe .
“ Food is your friend , but it should be more than a secondary thought ,” Stamp said . “ It really should be a primary element of how you design both your peaks and your valleys . At the end of the day , you have to take care of your stomach because your stomach will take care of how your brain operates and the way you perform on the trail .”
Stamp has more than 25 years of worldwide experience in bringing out the creative best in business professionals and students . In his previous corporate life , he attained one of his claims to fame by being the inventor , creator , and section manager of “ Baked Lays ” for PepsiCo ’ s snack division of Frito-Lay . He is now a Content Director for the E3 Association .
Mixing fun facts , serious food-safety information , and history into his talk , Stamp kept the audience entertained , and it ’ s safe to say nearly everyone walked away learning something .
“ If you think about it , you can ’ t just take your food from home . I know a lot of you try it and just shove it in your trucks , in your van , and in your rig , and then expect it ’ s going to be the same experience out on the road ,” Stamp said .
The problem , he noted , is that when we ’ re out camping or overlanding , we ’ re not in the same environment or the same temperature as when we ’ re at home . Plus , energy management for our bodies is different , so we need to address calorie management , sugar management , and more when traveling .
