Grab-and-Go Muffin
This muffin is bound to become a staple in your freezer . The sweetness of the banana , combined with the chunky texture from the oats , makes for a delicious , filling muffin for the kids to grab on their way to school , and the perfect companion with your morning coffee . This recipe yields around 12 muffins ; feel free to double it so there ' s enough to go around !

2 eggs 1 cup sugar 1 / 4 cup orange juice 1 tsp vanilla extract 1 stick margarine 2 cups WonderMills flour 1 / 4 tsp salt 1 / 2 tsp baking soda 1 / 2 tsp baking powder 2 ripe bananas 1 cup chocolate chip 1 cup oats 1 / 4 cup milk dash of cinnamon 1 cup blueberries , 1 tsp flour
D I R E C T I O N S
Preheat the oven to 350 . Beat eggs and sugar .
Reduce speed and add the rest of the ingredients , besides for the blueberries .
Mix blueberries with 1 tsp flour and stir in with a spoon .
Divide the batter into muffin tins and bake for 30 minutes .
