Chunky Split Pea Vegetable Soup

There ’ s nothing like a hearty vegetable soup on a cold winter night . The split peas take it up a notch and lend that perfect satisfying texture .
1 onion , diced 3 carrots , diced 2 green squash , diced 2 yellow squash , diced 1 parsnip 2 cups chopped celery 2 cloves garlic 1 package yellow and green split peas
D I R E C T I O N S
In an 8 qt pot , saute onions and garlic .
Add the rest of the veggies and cover , allowing them to sweat on a medium flame . Keep stirring every few minutes . Add water to cover the vegetables , spices , and split peas ( including the spice packet ), and raise the flame .

Let it come to a boil and reduce flame back to medium . Cook for at least 2 hours , or until the split peas have softened . Note : you may need to add water as the soup thickens .

‘’ A dash of spice !’’ Have leftover challah ? Make irresistible croutons by dicing them into cubes , toss with some oil , salt , garlic powder and paprika , and bake at 400 for 10 minutes until crispy !
