Sutter Street Steakhouse in Old Town Folsom has stepped into

COVID-19. Owner and Executive Chef, Rich Veale, has developed
numerous structural changes to staff roles to maximize cleanliness
and safety including redefining bussing staff so they focus
on either cleaning up a dirty table or setting up a clean table,
so no dirty dishes and laundry cross with clean dishes and
laundry. They bring in Pinnacle Emergency Management to do
deep commercial cleaning every Monday when they are closed
to the public. Pinnacle also created and provided daily cleaning
kits, complete with PPE and chemicals, and trained staff on
how to use them daily.
